Well friends, travel and work and holidays have caught up with me yet again – I’m so late to recipe development for this blog! BUT? The great thing about blogging for 8 (EIGHT?!) years is that I have many a recipe to share that I know you’ll love. And these cacao crunch mini pavlova cookies are just that.
If I ever feel like being fancy I just whip up some version of a meringue. Some people take showers, some people put on makeup or pretty clothes. I whip egg whites into oblivion and bake them at low temperatures to create crispy-chewy-cocoa-flavored goodness. We do what we do, right?
This past weekend was so fun! We spent a long weekend in Oklahoma with my parents, then came home and spent time celebrating the 4th together. There was ice cream and pizza, long walks on campus, my favorite local burger joint, pool time and fireworks with friends, birthday parties, and an onslaught of long-awaited shipments to wade through. In short life has been happening and I kind of love it!
So while I get things back in order, I hope you enjoy these amazing little delights. They are great when savored one by one with hot coffee, and (as with all food) in the company of those you love!
