Hey y’all!!!  Hope your Wednesday was as good as mine 🙂  Nothing like being able to take a half day and then go tromp around Boulder with my sister!  After I left work Salah, Chad, and I went to Chautauqua Park to try and hike the 1st Flatiron.  Note the word try.  We made it about 1/3 of the way up before we decided that it would be too dangerous to go any further since the trail would ice over.  So we stopped and took pictures instead!

The good news is it was a gorgeous day and we did have a lot of fun!  AND I found a new trail for when we go hiking in the summer 🙂  Then we went to Amante Coffee in Boulder for some iced coffee:

We walked and sat down by Boulder Creek for a few minutes in the sunshine for a bit, and then headed towards Pearl Street Mall.  Then we took that party to Tees & Cakes, one of the coolest cupcakes shops EVER!

They had an awesome selection of cupcakes and bite-size babycakes:

I finally decided on an Irish Creme cupcake:

After our little snack we decided to head on over to Hapa Sushi for happy hour dinner.  Hapa is the first place I ever tried sushi, and it’s still my favorite!  I was a little bummed that I couldn’t have any fish, but all of the courses were still fabulous.  I didn’t eat all of these, but Nate, Salah, Chad, and I all shared them.  First up, miso soup:

And then this weird ball of grilled rice surrounded by teriyaki sauce.  ‘Twas interesting:

There was some unpictured spicy edemame, and then the fish-eaters had calamari:

We ordered a TON of rolls!  I had a cucumber/avocado roll and a veggie roll:

We finished up with some moshi balls:

They were super nice and split them all 4 ways so we could all try a piece!

I absolutely LOVE Boulder…it’s such a fun city to get to know 🙂  There are definitely some interesting people out and about all the time, and everyone’s so friendly.  I don’t know if we could ever actually live there, but it’s so nice to work there!  I haven’t had breakfast yet, but we are getting ready to go skiing!  It’s going to be Salah’s first time 🙂  I’m excited to hang out and watch her learn…she’s going to rock it!

What’s you’re favorite outdoor activity to do?  If you could learn any new sport, what would it be? I love love LOVE hiking…it’s such a challenge, and then you get a great view at the end!  What’s not to like?  And if I could pick any new sport to learn, it would probably be either surfing (which I’ve done before but definitely am not a pro at) or rugby (to cater to my extreme competitive streak ;)).  Hope y’all have a fabulous Thursday!

    I love your posts!! Favorite outdoor activity would.have to be nature hiking with my kids I rarely get to go but I enjoy exploring with them!

    You take beautiful photos, what camera do you use? I need a new one!

    i love the pics of the snow! it looks so pretty….i see you are in short sleeves and your sister is in shorts…was it warm? hobby?! i would say we are really interested in getting into mountain climbing. we just watched EVEREST seasons 1 and 2 and we’re hooked. it looks so challenging, but so exciting. we also just watched kilamenjaro on MTV with jessica biel, where they are hiking the mountain to educate people on awareness of the poor contaminated water conditions in africa. so sad.

    Raymond and I tried to back country camp in the rockies in 2006 and got snowed in and had to get out of the trails since we didn’t have snowshoeing shoes. So instead him and his body climbed the flat irons… I wasn’t really itnrested in it.. I actually am glad I wasn’t there to watch them..

    My favorite outdoor activity is hiking or just playing with my daughter. 🙂 Your fun in Boulder looked like a great way to spend time as well.

    New sport? Hmmm….I guess I would have to say skiing. I’ve never been in a lot of snow and think that would be cool. Or wakeboarding since that is more realistic living right by a lake. 🙂

      oh, lakes are SO FUN! i’ve never done wakeboarding/waterskiing (tried once – epic fail) and i think that would be so fun to try!

    Beautiful scenery!!! 🙂 I love hiking! Just don’t get to do it too often..

    I also lurrrve cupcake shops..We had one here in DC called Georgetown cupcake that I love and TLC is airing a show about the shop in the next few months…I love Cake Boss so I’m sure I’ll watch 🙂

    My favorite outdoor activity is running in new areas 🙂

    How fun…I haven’t ever been to Boulder but I have heard that it is such a cute and fun city! Ah…one day I will make it there!

    I would love to learn how to surf! The husband and I took surfing lessons in Hawaii and it was SO fun!

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

3 things you can do RIGHT NOW to improve your day: 3 things you can do RIGHT NOW to improve your day:

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
