Bacon. It’s glorious.
I guess it had been a while since I’d truly made what Nate calls “real bacon” (translation: not turkey bacon) at home, but this weekend changed all of that. Sunday night we made dinner at home, the star of which was Jessica’s Warm White Bean and Spinach Salad. I have to say, I fell in love with bacon once again when that dish hit my lips!

Oh what? You already do? Nevermind then.
So when we ate the leftovers for lunch and didn’t have any more at home, I improvised. In lieu of quinoa, I went with farro. It’s amazing. It’s chewy. It’s super cheap and organic when you buy it in bulk at Costco. In short it’s my new favorite grain.
Also, since I used the last of our fresh veggies on the spinach salad, I opted for apples in this dish. Granted I doubt that it has any real nutritional value once you calculate the bacon drippings and sugar, but you could certainly add spinach or kale or any number of greens to it. Just make sure you use the bacon…and the real kind at that.
- 5 slices bacon, cut into cubes
- 2 medium apples, cored and cubed
- 1 onion, chopped
- 2 large carrots, grated
- 2 cloves garlic, minced
- 2 cups prepared farro
- 2 Tbsp brown sugar
- 1/2 tsp red pepper flakes
- 1/4 tsp cayenne pepper
- salt and pepper to taste
Prepare farro as directed. In a skillet over medium heat cook the bacon til crisp. Remove with a slotted spoon to a plate and set aside. Saute the onion and apples in the bacon grease until tender and translucent. Add the garlic and the grated carrot and saute another 2-3 minutes, stirring frequently to make sure the garlic doesn’t burn. Add the brown sugar and spices and stir to combine. Add the farro, stir to combine, and then taste test for salt and pepper. Right before you’re about to serve it add the rest of the bacon.

Apparently real bacon has the magic to cure headaches, frustrations, and sadness…even if it’s just while you’re eating it! Viva la bacon!

Thank you all so much for your comments, emails, tweets, and facebook messages about the post from yesterday. I’ve had to deal with deaths in our beloved family before, but for some reason it just never sat this close with me. I miss our baby so much, and although yesterday was an OK day at work and I made it all the way through, once I got home and started working on blog stuff I just felt the entire weight of it all come crashing down around me again. You would think I’d be out of tears by now, but I’m not. Anyway, thank you for being there for someone that most of you have never met…God’s grace is truly being shown in you love.

oh my goodness, sweetie I just caught up on your blog and I am so sorry about your sweet baby. I cannot imagine the hurt you feel and yet, comfort knowing you’ll get to have your little one with you in heaven someday. One of my best friends went through this and as I watched her heal, her knowledge of heaven becoming even MORE real to her, since she now had somebody up there waiting for her, was a beautiful thing.

As much as I love grinding farro for breakfast…eating it in whole-grain form with dinner is extremely delicious as well!! It’s Chris’s favorite for sure. This recipes sounds great!

I know vegetarians that eat bacon. There’s actually a restaurant that feautered many vegetarian dishes that had an option to add bacon, kind of how we often see add shrimp or chicken for $3.99. Fittingly the restaurant was called Bacon. I love this recipe. I don’t have any Farro but I have a bag of wheat berries I give this a whirl with. Thanks for sharing, it’s sound fab!
