When it comes to food these days I’m really just in a state of trial and error. With my dive into Beautycounter and just trying to figure out how to be my healthiest self I’ve started to play around with diet. There are so many things to consider when you’re eating to be healthy, and the only thing I’ve seen from almost every diet out there is that plants and plant-based foods are almost always OK to eat.
BUT HERE’S THE DEAL Y’ALL – you’re a grownup and can choose to eat what you want and when you want it. For so long I struggled with wanting to follow a diet and to follow it perfectly, and the moment I “failed” I would just give up and indulge forever and ever amen. I think we can all agree that’s no way to live. But when we (I) act like a grownup and make choices based on the things we enjoy and the things we know our bodies need? Well, that’s called a sweet spot.
For me the trick has been getting more fruits and veggies in, alongside some healthier fats and a moderate amount of protein. I’m so over the protein craze at this point, and find myself starting to crave veggies more than anything else. Sweet spot. That doesn’t mean I’m ogling raw broccoli all day because EW, but I’m super happy to down a huge bowl of the roasted variety with a great sauce on top. Another favorite these days has been sauteed zucchini, chickpeas and an almond butter sauce that I randomly whipped up the other day.
This sauce, you guys, is just so creamy and melty and GOOD. I’ve served it with veggies, chicken and fish, and have been known to just eat it off the spoon. It’s the kind of thing that makes you sit back and wonder how it could be good for you…and yet it is. That’s the kind of food I dig!

5-INGREDIENT CREAMY ALMOND BUTTER SAUCE
Makes 4 servings
Ingredients:
- 1/4 cup creamy almond butter (no sugar and no salt added is best)
- 1/4 cup hot water
- 1 tablespoon lemon juice
- 1/2 tablespoon low-sodium soy sauce (coconut aminos or tamari can be subbed here)
- 2 cloves garlic, pasted
Directions:
- Combine all ingredients in a small bowl and whisk until creamy and completely incorporated.
- Serve with anything you’d like!
