The other day we had a fantastic brinner (breakfast for dinner = brinner), and it struck me that it has been Y E A R S since we last had breakfast for dinner. Literally, totally years. And how sad is that?! Breakfast is such a great meal to enjoy any time, and there are so many ways to make it a healthy and heart meal too. I’ve been so lucky to work with Great Day Farms to create some really great recipes, and in honor of my beloved brinner I just had to share my favorites.
WARNING: a few of these include runny eggs. If you’re like my husband and gag at that idea, just make your eggs over hard (or however you enjoy them). This isn’t an egg dictatorship 🙂 The idea is to always enjoy eggs the way you enjoy them!
RUSTIC BEANS AND EGGS. This one takes a little prep, but it is WELL worth it! The reality is the hands-on part is really short, and once the beans are done all you have to do is fry up your eggs and enjoy. It saves well and freezes well too!
SOUTHWESTERN VEGGIE HASH. This is a really great one to make during the summer months with all kinds of delicious garden veggies. Mix it up, make it your own – and use the leftovers for regular breakfast in the morning!
PARMESAN-HERB BROILED EGG-IN-A-HOLE. A fancier version of the regular ol’ egg-in-a-hole! More flavor, and it pairs so well with other breakfast options. If you want to go full-blown Italian you could serve this alongside a roasted Italian sausage and some fresh fruit.
CHEESY CHILE RELLENO SKILLET. This one is an homage to my Tex-Mex roots and is fabulous served with warm tortillas, salsa and guac!
ITALIAN SCOTCH EGGS IN ZUCCHINI CUPS. I realize it’s not zucchini season but these are great even without the zucchini cups!
