3-Minute Avocado Toast with Hard-boiled Eggs || HeathersDish.com

This snack.  I can’t even come up with the words you guys – I have literally been having it every day for the past week and a half and there’s no way I see myself getting tired of it any time soon.  It’s filling and super flavorful but simple, and pretty much everything a good snack should be.

First of all, let me just share this: I am SO EXCITED to be working with Great Day Farms to help develop recipes and find new uses for their fantastic eggs.  The product is outstanding and we used their eggs long before this partnership ever came about, but the more I’ve learned about the company the more I’ve fallen in love.

Y’all know my heart and know that what I want more than anything else in the world is to love others well because God first loved me, the least deserving of his love and compassion.  To find a company with a product I love and who stands behind those same principles is an amazing place to be!

OK.  So boiling eggs isn’t really all that hard, but it’s one of those things that can just be kind of a pain to do at times.  BUT did you know that Great Day Farms sells already boiled eggs right in the deli case?  In the name of transparency I was a little hesitant to try them because I’ve only ever eaten freshly boiled eggs, but these were perfectly cooked and just so easy to use!  I’ve been buying a couple packages every week and grabbing them for snacks (or using in salads) as a good, healthy protein.
And a big bonus that I just found out yesterday – Wes loves them!  I didn’t realize that he would because he’s being super picky about textures these days, but after he kept grabbing at my snack I let him have some and then I didn’t have any more!

 

It’s hard to really call this a “recipe” because it’s just a bunch of really easy ingredients thrown together in minutes, but the result is delicious, healthy and incredibly satisfying!

3-MINUTE AVOCADO TOAST WITH HARD-BOILED EGGS

  • 1 piece sprouted whole-grain bread
  • 1/2 ripe avocado
  • 1 Great Day Farms hard-boiled egg
  • pinch of salt
  • pinch of pepper

You guys, the biggest tip I can give you is this:  the pepper is KEY to this snack.  It brings out the flavors in all of the components, bread included, and makes it a good cohesive dish.  Toast the bread to your desired doneness; I’m right in the middle of the road when it comes to toastiness of bread!  While the bread is toasting, mash the avocado with the salt.  When the bread is done toasting, spread with the mashed avocado.  Slice the egg and place in an even layer over the avocado, and then sprinkle with the black pepper.  Enjoy!

    omg… I use English muffins for so many different single serving or 2 servings sandwiches… I have a personal favorite that I call the Ultimate (Specific Name change, based on type of meat used ) Breakfast Sandwich… if you don’t mind I would love the opportunity to share my creation with you and others on via your website… Please let me know… here is one version of the name “Ultimate Chicken Breakfast Sandwich” … I’ve used pork chop, sausage, both regular and Canadian Bacon, chicken, beef, elk, venison and I am considering try it with fish…. basic it is a cross be McDonald’s breakfast McMuffin, Manhattan eggs (or what some call chicken in a basket) and grilled English muffin with cheese…. LOVE ‘EM… and so far I everyone that has had one like it… no matter the type of meat.

      Hi Sylvia! To be honest it’s all going to depend on a lot – the type of bread you use, the size of the avocado, the size of the egg. If you use Great Day Farms eggs then it’s typically 70 calories, but the rest you will likely have to figure based on the ingredients you use 🙂

      Hey Bob! I think all things are tastier with guacamole, but this toast has some really subtle flavors with just the avocado. However, if you have some guac lying around I say go for it!

    I love avocado toast! I actually didn’t have it until I went to Big Traveling Potluck in April. While there they had an AVOCADO TOAST BAR. It was heaven I tell you. H.E.A.V.E.N. Your version is so simple, it is bound to be delicious.

    This snack will be my dinner. 😉 I’ve always done avocado toast with runny eggs, but now that I’m pregnant I’m missing my runny eggs like CRAZY. Yum.

    I love hard boiled eggs. I, too, would be a little hesitant to buy them already cooked but I trust your judgement! This is one of my favorite breakfasts ever! Full of protein and good fat to get me through the morning!

    Wow, what a brilliant idea! I love smashed avocado toast but sometimes I feel like I need to add a little something extra. This sounds so good and still easy! My husband and daughters would love this, too!
