Another episode of “From the Archives” because you guys? I really don’t know what I could do without these slow cooker chicken fajitas. I don’t love every single slow cooker recipe I come across because more often than not it just doesn’t compare to the real deal. A lot of times I just don’t have a need for a slow cooker meal because my job allows me to work from home and take care of stuff like cooking.
That being said I’ve found that these days are just getting busier and busier, and there will most certainly be times when I’m needing to take advantage of a good slow cooker meal. Tonight, actually, is just one of those nights and GUESS WHAT THIS GIRL IS MAKING?! Fajita salad!
Now here’s the deal: I’m a huge huge HUGE fan of pan-seared fajitas. I love the real caramelization that comes from a hot pan and some oil, way the onions almost melt into it. It’s all good, all amazing, and all something I can’t get enough of. But what this recipe lacks in pan-seared goodness it definitely makes up for in ease and delicious flavor. I love to have mine alongside a salad filled with greens, carrots, radishes, cheese and avocado. It’s also a great way to feed a crowd (hello football season!) and works great with tortillas, cheese, rice, beans, and all the fixings.
So basically? Well, basically if you want to make dinner a million times easier on yourself without sacrificing tastiness then this is your go-to. And you should know that I’m going to be putting my money where my mouth is and devouring this goodness tonight!
